How to make pozole?

Pozole is one of the most popular dishes of Mexican cuisine , especially during festivities and celebrations. This delicious dish is a thick soup made of corn, meat, and chili and is perfect for any occasion. If you want to learn how to make pozole at home, keep reading.

Ingredients:

1 kilogram of pozole corn
1 kilogram of pork (preferably leg or shoulder)
2 large onions
8 garlic cloves
3 dried guajillo chiles
3 dried ancho chiles
1 head of garlic
2 bay leaves
Salt to taste
To decorate: lettuce, onion, radish, oregano, lemon and toast


Instructions:

1. Soak the corn: Wash the corn and soak it in cold water overnight or at least 8 hours. This process will soften the corn and speed up the cooking time.

2. Cook the meat: Cut the pork into pieces and place them in a large pot of cold water. Add an onion halved, 4 garlic cloves, and 1 bay leaf. Cook the meat until it is tender and falls apart easily, about 2 hours.

3. Prepare the chiles: Clean the dried chiles and remove the seeds and veins. Soak the chiles in hot water for about 15 minutes until they soften. Then, place the chiles in a blender along with one onion, 4 garlic cloves, and 1 cup of the meat broth. Mix everything until you get a smooth sauce.

4. Add the corn and sauce: Once the meat is cooked, add the soaked corn and chili sauce. Add enough water to cover everything and add another bay leaf and salt to taste. Cook over medium heat for 2 hours, stirring occasionally to prevent sticking.

5. Serve the pozole: When the pozole is cooked, remove the bay leaves and serve in bowls. Add lettuce, onion, radish and oregano to taste. Serve with lemon and toast.

Tips to make the perfect pozole:

-Use good quality pozole corn and soak it properly so that it softens before cooking.

-Pork is the most common option to make pozole , but you can also use chicken or beef if you prefer.

-Dried chiles are an important part of the flavor of pozole. Use guajillos and anchos for an authentic flavor.

-If you want a spicier pozole, add arbol peppers or jalapeños .

-Make sure to remove the bay leaves before serving the pozole.
